The 86, and a ticket the kitchen never got
About three minutes.

The night
It is 8:40 on a Friday. The last salmon just left the grill, and three servers are still selling it to tables that will wait twenty minutes to hear "we're out".
Same night, table 12. The server rang the order twenty-five minutes ago. The grill never saw it. Nobody knows until the guest waves someone down.
What it costs, in published figures
Nobody publishes what it costs a restaurant when a sold-out dish keeps selling, or when a ticket never arrives. No figure exists. We print none, and you say none.
What is published is the rent on the screens that carry tickets today:
- Kitchen screens: $30 a device a month on one register maker's plan, $20 on the plan above it. That is $360 or $240 a year for each screen.
- The register they hang on: $49 or $149 a location a month.
- A second register maker lists kitchen screens as an add-on and publishes no price for them.
What we build for it
It is in the part named The Floor, the Kitchen and Expo, which is quoted in writing.
The 86 list
- The chef 86es it once, with a tap or by saying it. Every dish that needs it goes gray on every register.
- It comes off the menu guests are reading within 30 seconds, and the floor's phones are told.
- For dishes already fired, the chef is asked which ones the kitchen still makes, and the server is told which table to talk to.
- Out of a garnish, not the dish: the dish stays on, and the guest is told first. "Served without cilantro today."
- Nothing comes back on a timer. The board asks, and a person brings it back.
The ticket
- A ticket the kitchen has not received turns red within seconds, at the register and at expo: "GRILL HAS NOT RECEIVED table 12."
- Dishes rung and never sent turn their own table red within a minute.
- The times are settings the restaurant chooses.
Runs today, or built for you
- Built for you: the kitchen screens, expo and the 86 list, for each restaurant.
- Runs today, one thing under it: the online store at our co-founder's business refuses an order for something that has run out. It is a shop, not a kitchen.
- On the walkthrough now: the 8:40 PM screen is the 86. The ticket is one tap deeper: "Where is table 12's food?"
Where each figure was read
Each on the maker's own page, on October 8, 2026. A published price changes without notice.
- Kitchen screens at $30 and $20 a device a month; the register at $49 and $149 a location a month: Square, restaurants pricing, squareup.com/us/en/point-of-sale/restaurants/pricing.
- Kitchen screens listed as an add-on with no price: Toast, pos.toasttab.com/pricing.
For owners. If a seller sent you this page, we pay them a commission if you buy. It does not change your price. They cannot quote a price or take a payment. You pay only Guerrilla X, on a written scope.
Selling this? The question that opens the subject, and what never to say, are in the kit: The lessons, for the seller.
The restaurant, the people and the rooms in these pictures are made up, and the pictures were made with AI. The screens in them are real: they are the walkthrough's own.
